Not only does oatmeal reportedly offer health benefits, we all know it makes for an interesting cookie. This version is a bit unusual since it is paired with chocolate rather than the traditional raisin. Those of us who enjoy oatmeal quickly appreciate the boost of flavor that results, especially when mixed into my signature mound of soft and chewy cookie dough. Combining no less than two types of chocolate chips - (1) milk chocolate and (2) dark chocolate - with oatmeal’s grit and nuttiness, this cookie just gives you so much to chew on.
